In honor of my birthday, I'm posting a couple of recipes from my childhood. (Since I'm probably entering my second childhood!) When my birthday came around, Mom would always ask what I wanted for dinner. I didn't always pick the same thing but here are a couple of dishes that I absolutely love...and that I haven't had in years. (To friends and family...hint, hint!) Either of these would also make a lovely alternative to ham for Easter.

BIRTHDAY STEAK


(serves four)
2 lbs Round steak, sliced 1/4 inch thick. (Ask the butcher at your grocery store to do this for you.)
1 lb. bacon—chopped, raw
1 med. onion, chopped
2 Tbs. cooking oil

Cut steak into serving pieces, allowing two servings per person. Dividing chopped bacon and onion into equal portions, roll steak pieces with bacon and onion and fasten with toothpicks. Brown rolls in hot oil in oven-proof dish. Cover and bake in 350 degree pre-heated oven until tender. Add water as needed. Serve with baked or mashed potatoes.

This second recipe may sound weird, but trust me. It's to die for!

SAUSAGE & LIMA BEAN CASSEROLE


(serves four)
1 lb. ground sausage
10 oz. frozen lima beans
1 can condensed tomato soup
1/2 pkg. chili seasoning mix
Cook sausage and drain. Combine with rest of ingredients and bake at 350 degrees until hot and bubbling. Serve over mashed potatoes.

A great side dish for either casserole is my mom's

Crisp Apple Coleslaw


2 Tbs. mayonnaise
3 Tbs. vinegar
2 Tbs. water
1 tsp. sugar
1 ˝ tsp. celery seeds
1 tsp. salt (or to taste)
dash of cayenne
1 lg. tart green or red apple, peeled, cored, and coarsely grated
1 Tbs. freshly squeezed lemon juice
5 c. shredded green cabbage (about 1 medium head, cored)

For the dressing, whisk together the first seven ingredients; set aside. Toss the grated apple with the lemon juice. Put the shredded cabbage in a bowl; add the grated apple and toss. Add the dressing and toss again, so that the slaw is well coated. Serves 8.
