Like many of you, I have days that are busier than usual. Back when my sons were at home, when my writing was going well, I hated to quit to cook supper. But, since our local child protective services frowns on not feeding your children, I would turn to Campbell soups for help. Here are a couple of my favorite Campbell recipes that are quick and easy...with ingredients you usually have available.
Cut 4 thin slices of lemon and set aside. Heat oil in skillet. Add chicken and cook until browned. Add soup, milk, Tbs. lemon juice (squeezed from remaining lemon), and pepper. Top chicken with lemon slices. Cover and cook over low heat 5 min. or until done. Serves four.
Cook linguine according to pkg. directions. Add broccoli for the last 4 minutes of cooking time. Drain. Heat butter in skillet. Add chicken and cook until browned, stirring often. Add soup, milk, cheese, pepper, and linguine mixture and heat through. Serve with additional Parmesan cheese. Serves four.
