March Holidays—Saint Patrick's Day
What better way to celebrate the holiday than with an old-fashioned Irish Boiled Dinner...made simple.
4 lbs. corned beef brisket
7-8 lg. potatoes
1 lg. head cabbage, cut into 8 wedges
8 med. carrots
6 med. onions
1 lg. turnip
Put corned beef into a large pot, cover with water, and cook 3 hours. Wash, peel, and slice all of the vegetables. When the corned beef is tender, add the veggies and simmer until they're cooked. Drain off the water and place on a large, heated platter; add butter to vegetables and season to taste.

5 c. flour
1 c. sugar
dash of salt
6 tsp. baking powder
1 tsp. baking soda
1 ½ c. raisins
1 ½ pt. buttermilk
Grease a large cast iron frying pan. Preheat oven to 400 degrees. Mix all ingredients and place in greased pan. Bake at 400 degrees for 15 minutes. Reduce heat to 300 degrees and continue baking for 1 hour. Serve warm with butter and...
Joyce's Famous Irish Coffee
8 oz. newly brewed coffee (regular or decaf)
Brown sugar to taste
1- 1 ½ jigger of Bailey's Irish Crème Liquor (or any other good brand of Irish crème liquor)
Whipped cream to taste.
Pour hot coffee into 10 oz. cup. Add sugar and Bailey's to taste and top with whipped cream.
Now, put on some good Celtic music, light a scented candle, sit with your feet up, and enjoy your Irish Coffee.
