Here is a recipe that I thought gave a different slant on chicken salad...and it just screams "May!" to me as well as being easy to make.
Toss romaine in large bowl with chicken, fruit, and onion. Sprinkle with almonds. (Save this for last minute if taking salad for an away-from-home affair.) Serve with dressing. Makes four servings.
To honor all mothers on their special day this month, I present my mom's favorite dessert from me.
Beat eggs and dry ingredients until well blended; mix in butter. Stir in remaining ingredients. Pour into 9x9 inch pan set in another pan of boiling water. Bake both pans at 325 degrees for 45 minutes or until set like custard. Do Not Overbake! Cool and cut into 2" squares and serve with whipped cream or vanilla ice cream.
