Okay, we're headed into the 2006 holiday season. I have so many things to be grateful for, it's hard to list them all. Most of all, I do want to express how thankful I am for our fighting men and women who are willingly putting their lives on the line all over the world to protect my freedom. And another special thank you to all firemen and policemen who work a hard and dangerous job for not near enough money. As usual, a big thanks for my family and friends and their continued safe, healthy, prosperous lives. To all of you...Happy Thanksgiving!
Over the years (far more than I care to remember), I've had many different sweet potato casseroles. This is my absolute favorite. It comes from a old friend and co-worker, Ruby Enky, a warm sweet woman who loved children with a passion. Ruby, I miss you still.
Mix and place in oven proof baking dish. Sprinkle topping and bake at 350 degrees for 35 mins.
Tired of the old green bean casserole on the Thanksgiving table? Here's a little dish from my brother David, who is almost as good a cook as I am, but not as cute.
Cube cream cheese and melt in milk. Add everything except the cheddar cheese. Cook 10 mins. In microwave on high. Stir 3 times during cooking. Sprinkle cheddar cheese on top and microwave on high until cheese melts...about 1-2 mins.
