Ten Minute Meat Loaf

 

1 lb. ground beef

1 egg

½ c. bread crumbs

¼ c. milk

1 Tbs. dried onion soup mix

2 Tbs. ketchup

2 Tbs. soy sauce

½ c shredded Swiss cheese

 

Combine all ingredients and shape into a round or oval loaf.  Place in a microwave-safe dish, cover with waxed paper, and microwave on high for 10 minutes, turning once after five minutes..  Drain, cover with foil, and let stand for 10 minutes before slicing.  Makes 4-6 servings.

 

Baked Bananas

 

¼ c. orange juice

½ tsp. orange zest

½ tsp. cinnamon

¼ tsp. each ground cloves and nutmeg

1 Tbs. butter

4 firm bananas, peeled and sliced

 

In a 1 ½ qt. glass casserole dish, combine juice, butter, zest, and spices.  Microwave on high 2-3 minutes (or until bubbling), stirring twice.   Add bananas and microwave on high another minute.  Serve hot.
